PB Chocolate Chip Cookies (Vegan + GF)

Cookie season has arrived, but who are we kidding…every season is cookie season. It can be difficult to find vegan and GF cookie recipes that are actually delicious and have that real cookie texture and taste. These are pretty darn close though. img_0624They are:





and also munchkin approved. Plus, if you’re feeling extra sneaky, don’t tell anyone they’re vegan, whole grain, and GF. They might not even notice. img_0618

PB Chocolate Chip Cookies (Vegan + GF)

2 cups oat flour

1/2 cup almond flour

2 tsp baking powder

3/4 cup coconut sugar

1/2 cup coconut oil (melted)

1/2 cup almond milk

1/3 cup natural peanut butter

1 tsp vanilla

3/4 cup chocolate chips


  1. Preheat oven to 350°
  2. Mix the coconut sugar, melted coconut oil, almond milk, and vanilla in a bowl. The coconut oil will start to solidify because of the cold almond milk, just keep stirring.
  3. In a separate bowl, mix the oat flour, almond flour, and baking powder. Add the wet ingredients to the dry ingredients and mix well.
  4. Mix in the peanut butter and the chocolate chips. Form into 20 small cookies. Pat them down a little and bake for 12-15 minutes.
  5. Let them cool and enjoy.
